15 Minute Rooster and Sausage Jambalaya with Oats

025

Hearty, Creole-spiced jambalaya is the right stew to serve up on Mardi Gras – and this flavorful model takes solely Quarter-hour to organize – due to the key ingredient: Oatmeal!

Now earlier than the yuck-factor takes over, let me guarantee you, nobody in my household might inform that they weren’t consuming brown rice on this dish

Oatmeal for dinner! Yup, savory oatmeal: I used to be completely intrigued by the concept on this latest St. Louis Submit Dispatch article. I’m prepared to strive nearly any new meals – however I wasn’t certain I might get used to the concept of hen with my oatmeal as a substitute of blueberries. Round our home, oatmeal is commonplace breakfast fare.

However the savory oatmeal article acquired my artistic juices going. Plus the dietitian mother in me is at all times eager about one other complete grain household meal possibility – particularly a fast one. Our go-to grain with dinner is mostly brown rice, but it surely takes 45 minutes to cook dinner. (Sure the ‘on the spot’ model is obtainable, but it surely’s a bit pricier and nonetheless takes an excellent 10-Quarter-hour to cook dinner.) Oatmeal cooks in just one minute for fast oats and 5 minutes for quaint oats.

Nicely, let me simply say, after tasting this Creole spiced dish with thick slices of sausages, hen, peppers and a wealthy tomato sauce, I’m a BIG savory oatmeal convert!  Plus, as a result of the oats are tossed in with the spices and sautéing greens, the daring flavors of New Orleans are infused all through the dish from the entire grain base to veggies.

My youngsters (who’ve skilled fewer years of oatmeal for breakfast) had no bother diving right into a bowl…after I divulged the key ingredient. Even my husband who was a particularly tentative savory oatmeal eater was blown away by the rich-tasting creaminess of the oats (my phrases, not his, however he did REALLY prefer it!)
