SEASONAL INGREDIENTS: AUTUMN/ OTOÑ – Fruits & Greens in Spain

October the month when Autumn is upon us and the fruit and veggies in season begin to change. These are the fruit and veggies which might be coming into season.

 

 

Fruits in season in Spain this month are:

avocado, persimmon, custard apple, pomegranate, kiwi, mango, apple, pear, grape and banana. On this month the season of figs, peaches, melons and nectarines will finish, and the arrival of citrus fruits akin to lemons, tangerines and oranges will start.

 

Greens in season this month are: chard, artichoke, celery, eggplant, broccoli, pumpkin, onion, purple cabbage, cauliflower, endive, spinach, pea, inexperienced bean, lettuce, turnip, cucumber, pepper, radish, beet, cabbage, tomato and carrot.

Tropical Fruit Crumble

 

Substances

 

2 mangoes peeled and cubed
1 small pineapple, peeled, cored and lower into 2cm cubes

2 nectarines peeled and cubed
2 tbsp orange or pineapple juice
1 agency banana, thickly sliced
good splash of rum or Malaga Wine
zest of 1 lime
1 tsp floor ginger
110 g chilled butter, lower into items
175 g plain flour
4 tbsp mild muscovado sugar

2 handfuls of muesli (many recipes use oats, however we discover the muesli provides a beautiful crunch)

 

Technique

 

Preheat the oven to 200C/180C fan/Gasoline 6

 

Put the nectarines, pineapple, cinnamon and fruit juice in a saucepan or saute pan and cook dinner over a low warmth for 7-8 minutes till the fruit begins to melt – add somewhat water if wanted.

 

Take away from the warmth and stir within the rum or Malaga wine, banana, mango and lime zest then spoon the fruit right into a pie dish. Sprinkle over the ginger and put aside.

 

Rub the butter into the flour till it resembles coarse breadcrumbs, then stir within the sugar, muesli and a very good pinch of floor ginger. Spoon over the fruit and bake for 30-35 minutes till the topping is golden.

 

Serve with Custard, Cream or Vanilla Ice Cream.
