Fast Asian Lunch Thought For One

When do I make this fast and straightforward lunch for one? 

Normally after I’m in a rush, I don’t really feel like cooking, or after I’m lazy or drained! That is after I make my fast and scrumptious lunch thought for one.

It is certainly one of my best and favourite lunches!

I begin with a bundle of “Thai Kitchen Garlic Noodle Soup” (it is gluten free and vegan too and a packet serves one) as my base.

These packets are offered individually in lots of supermarkets within the Asian part (I am not endorsing them, simply sharing what I made)

I measure the water in line with the bundle instructions and add it to a small sauce pan. I then add the seasoning combine however I omit the oil packet. 

I add the dry rice noodles, a 1/2-1 cup of vegetable broth, 1/2 teaspoon of turmeric powder, some thinly sliced kale. and 1/2 cup of minimize up tofu to the pan.

I carry all of it to a boil after which simmer till the noodles are cooked (about 3 minutes). When it’s executed, I then prime the soup with sprouts and or any recent herbs similar to recent basil, scallions, cilantro, or mint.

Generally I give it just a few squirts of recent lime as nicely.

It is a fast, filling, scrumptious lunch that I can throw collectively in 5-10 minutes. If I’m nonetheless hungry- I’d eat a rice cracker or two!

Substances: 

1 packet of Thai Kitchen Noodle Soup ( noodles and seasoning combine)

1/2 cup of cubed tofu

1/2 teaspoon of turmeric

1/2 cup of kale minimize into ribbons

Toppings: chopped scallion, mint, basil, recent lime juice and or sprouts 

Instructions: 

Put all the things besides the topping right into a saucepan and convey to a boil. Cut back to a simmer and prepare dinner for about 3-4 minutes till noodles are tender and separated (stirring sometimes)
