Louisiana Hen Gumbo (Gluten-Free)

1/2 cup unsalted ghee (or avocado oil when you’re dairy-free and may’t do ghee)
1/4 cup arrowroot flour
2 medium cloves garlic, minced
2 medium yellow onions, finely chopped
3 stalks celery, finely chopped
1 massive inexperienced bell pepper, finely chopped
